The Baker has another hit on her hands with these banana-cacao nib muffins, with a banana-peanut butter filling.  Breakfast or desert?

Vegan Banh Mi.  My new specialty.  

Lots of gravel miles were logged this weekend, with many more to come this spring.  

The first attempt at vegan donuts produced an instant winner!  The next step is coming up with donut/topping combinations.  I am thinking peanut butter and jelly.  

Vegan pho with seitan steak.  Pho and beers might be the perfect post run/ride recovery meal.  

The gravel was good today!  I just wish I didn’t have to bundle up and wear skiing gloves on the bike.  The homemade energy bars from yesterday were a winner.  I might be on to something here.  Oh yeah, my first dog attack of the year happened today.  Always a good test of the bike handling skills.  

Pre-run/ride breakfast included a couple of these vegan garden muffins.  This was the Baker’s first attempt at this recipe and they are a definite keeper!  Oats, grated carrot, grated zucchini, maple syrup,coconut, raisins, and nuts make up these dense little energy bombs!  I have already put in my order for a batch for my pre-race breakfast on May 14th.  

The Baker has a 20 mile training on Sunday in preparation for her marathon in May.  We have been experimenting with pre-race dinner ideas, and decided on loaded baked potatoes for Saturday night.  They were topped off with vegan chorizo, Teese cheese, Tofutti sour cream, and textured vegetable protein.  Damn right!
